My wife and I both believe that family dinner is a very important part of our lives. Sharing a meal with our children each night lets us reconnect with each other and the kids at the end of each day. During the week my wife often has to work in the evening and I am looking for some help with quick and easy to prepare meals for meals for our family. I love to cook but lack the time required for traditional recipes. Can you tell me what the quickest recipes in your book are? Some nights I have about 30 min. to have the meal prepared and on the table, other nights I have maybe 15 min. Just looking for some guidance.

My 70 Meals, One Trip to the Store cookbook, has recipes such as Oven Fried Fish, Chicken Strata, Salisbury Steak, pastas and more that all have a minimal prep time, and short baking time allowing you to achieve your dinner crunch time without resorting to processed, packaged frozen meals or takeout. If you can work some planning into your week and spend time cooking one or two nights, maybe on the weekend, the recipes in Cook Once... Eat Twice! will teach you how to remake those leftovers into amazing quick and easy dinners that taste nothing like the first night's meal. I use this book all the time, and I've found that most of the recipes are pretty quick to pull together. If you think ahead, the Creamy Crock Pot Chicken is SUPER fast and delicious. Also the Honey Chicken and Grecian Chicken-- both of which have great flavor and don't take a lot of time.
