Ceviche Yucateco

Ingredients

  • 1-1/2 pounds shrimp Shrimp Recipe
  • 1-1/2 tablespoons salt
  • Fresh squeezed juice of 8 limes
  • 1 red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons pickled jalapenos, diced
  • 3 medium habanero peppers (seeded) or 10 banana pepper rings, diced
  • 2 avocados, seeded and diced
  • 1 bag firm tortilla chips

 

Butterfly shrimp and dice in small pieces. Place in baking dish. Top with salt, lime juice and onions. Cover and marinate in refrigerator for at least 3 hours, and up to overnight. Add avocado, cilantro and peppers just before serving. Serve with tortilla chips, or over lettuce leaves

 

 

 

Carrot and Arugula Salad

Ingredients

Carrot and Arugula Salad
  • 4 medium carrots, sliced into rounds
  • 1-1/2 tablespoons salt
  • Fresh squeezed juice of 8 limes
  • 1 red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 3 cups arugula (or Napa cabbage), chopped
  • 1/4 cup feta cheese, crumbled

 

BASIL DRESSING

  • 1 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 3 fresh basil leaves finely chopped
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 teaspoons lemon juice
  • 1 large clove garlic, pressed

 

Blanche carrots in boiling water for two minutes to slightly soften. Rinse immediately with cold water to cool. Drain. Combine carrots, arugula and feta. Top with Basil dressing.
